Eco-warrior and gastro pub operator Andrew Coggings has transformed the old Blenio Bistro site in Seven Dials into a specialist burger joint with ethical imperatives – and a thrilling sense of style. As at the Preston Park Tavern, the aim is to put the pick of sustainable Sussex on the plate. Even a humble burger deserves the best. So their beef, freshly ground daily, is sourced from Redlands Farm, Horam; bread inevitably comes from The Real Patisserie; cask ales from Harvey’s and Darkstar, while wines are organic, even biodynamic. They give you a choice of organic vegetable oil or beef dripping as the deep-frying medium for your triple cooked chips. Pick of the burgers – all patties are cooked medium rare – is the belter (for £11.95) featuring 6oz beef, brisket & chipotle chilli, guacomole, sour cream, salad. The triple chips are £2.95 extra. In summer, the perfect place to eat all this is in the sun-trap garden.
